Green aromatic herb sauce

This green aromatic herb sauce has an original flavour that changes according to your taste: by varying the quantity or variety of herbs used, you can prepare a sauce that’s ideal to serve with boiled potatoes, fish, bruschetta, hamburgers, boiled meat or, in general, any of your favourite dishes.

- Garlic, half a clove
- Parsley, 2 or 3 handfuls
- Anchovies, 2 fillets
- Olives, pitted, 4 or 5
- Capers, one teaspoon
- Salt as required
- Vinegar as required (optional)
- Olive oil as required
- Aromatic herbs to taste: chives, rosemary, marjoram, oregano, thyme, bay leaves, sage, basil, wild fennel…


Wash and clean the aromatic herbs.
Put all the ingredients in the food processor and blend until you obtain a thick sauce.
Adjust the quantity of olive oil according to your taste. If you’re not going to eat the sauce straight away, you can keep it for a few days in the fridge, in a glass jar.
