Description

The Brussels sprout belongs to the Brassicaceae family and is a variety of Brassica oleracea (its name is Brassica oleracea var. gemmifera).
Native to the Mediterranean area, the Brussels sprout is a plant with an annual growth cycle.
The plant has a taproot from which a number of secondary roots branch and can grow to depths of over 50 cm.
The stem varies in height between 30 cm and 90 cm; it grows upright and has petiolate leaves. The leaves at the tip are positioned like “rosettes” and are much larger than those found on the lower part, they are opaque and green, in shades that tend towards purple in some varieties.
Each plant produces numerous buds, which are the “sprouts” that we eat. They grow along the stem, gradually replacing the leaves.
The plants adapt to all kinds of soils and are highly resistant to cold weather, surviving in temperatures as low as -12 °C. Brussels sprout plants do not have any particular requirements; the only thing you really have to be careful about is watering during hot weather, when irrigation must be constant and regular.
Brussels sprouts are a vegetable highly appreciated in the kitchen; they are mainly eaten boiled, or used as an ingredient in more elaborate dishes.
